Blueberry Walnut Protein Muffins

I love having these muffins on hand for easy protein fixes, especially if you’re having a hard time getting adequate protein.  The muffins also make the perfect snack for a nursing mom too.  

  • 1 cup flour
  • 1/3 cup protein powder (try to pick as clean of source as possible)
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 cup oats
  • 1 egg
  • 1 cup applesauce 
  • 2 tsp. oil
  • 1/4 cup brown sugar
  • 1/2 cup milk (or alternative milk, like cashew)
  • 1/4 tsp. vinegar
  • 1 tsp. vanilla
  • 2 Tbsp. lemon zest
  • 1/4 cup walnuts
  • 1 cup blueberries
  • turbinado sugar 

Preheat oven to 375° and prepare muffin tin.

Sift flour, protein, baking powder and soda, cinnamon, and salt.  Stir in oats.

In mixer, beat egg.  Add applesauce, oil, and brown sugar. 

Mix milk, vinegar, and vanilla in separate bowl. 

With mixer on low, add flour and milk mixtures to mixer bowl by alternating a little bit at a time. 

Add lemon zest.  Then fold in blueberries and walnuts by hand.

Pour batter into pan (fill a little more than you would for cupcakes).  Sprinkle turbinado sugar on top.  Bake until toothpick comes out clean.  

Notes:  This recipe doubles well if you want to make a larger batch.  I’ve also added 1/4 cup hemp seeds to increase the protein even more.
